Fudge, Cookies, and Buckeyes were all apart of my Holiday Baking

I did my Holiday baking last week which involved making Buckeyes.  If you do not know what buckeyes are, they are a just a peanut butter mixture, shaped into a ball and then dipped in chocolate. I thought I would try something a little different and made a chocolate mixture ball shape too and dipped them in the chocolate as well.
Another thing I made which are my favorite to eat are chocolate No Bake Cookies. I also made Peanut Butter No Bake Cookies.
 
And then I made Oatmeal Raisin Cookies which I love as well.
Next I made Peanut Butter and Chocolate Walnut Fudge.
By the time I got done I was so over chocolate and peanut butter, lol….
I made individual bags and boxes of my special treats to share with some special friends one being my favorite McDonalds drive thru friend who takes excellent care of me when I go to McDonalds to get the Mcskillet Burrito that I love.  And the rest being family and my fabulous neighbors who always bake and share their goodies with me and my family every year.

Gumpaste Santa, Reindeer, and Snowmen

Here are a few of my latest Gumpaste Figures that were made over the past few weeks, for the holidays.

I am officially done creating Christmas Figurines and ready to move on to other exciting creations
such as Winnie the Pooh, Bride and Groom, A girl beside her Bed Praying, A Bear, A little Boy and Girl
playing in the Snow and some others. I love creating different figures that I have never done before
but I need to go shopping and buy lots of Fondant and Tylose Powder since I plan to get sculpting.
It sure does make the gloomy, cold days go by much quicker when creating gumpaste figures or
designing cakes. So this is the plan and one that I cannot wait to get started on. As always when
I get them done I will be sure to post them all so that all of you, my sugar friends can get a good look as
well as some great ideas for your own little sugar creating sessions. If the gloomy days are
starting to get to you grab some gumpaste and get creating, and be sure to send me a picture of
your newest creations I always love seeing the things you all create.
I will talk with you all soon, and I will have your late Christmas Gift available for you next week
like I said in my last post. I think you will all love it!

Merry Christmas Sugar Friends

Hello to all my Sugar Friends out there on this Christmas Eve! I just want to wish you all a Merry Christmas And a Very Blessed 2009!!

As you may have noticed we did not have a Giveaway this Month. But I wanted to let you know that I have a little something special for all of my Sugar Friends out there, but I just have not had the time to get it all finished. But I wanted to make sure you all know how much I appreciate all of your support over my past year in the world of Cake Decorating. It is official I have been creating with sugar a year now and my blog is now a year old. Wow time flies when your having fun, and I must say I have had some of the best times with you all. I am so excited as we prepare to enter into 2009 it is only going to get that much better. I have a special how-to video that I created for all of my Sugar Friends and just as soon as I get it finished I will get it posted for you all. You are going to love it, I can’t wait to share it with you. So be on the lookout for the post over the nesxt five days with your special Merry Christmas How To Video I created just for you.

I must get going for now the family is waiting on me, but I wanted to make sure to let you all know I appreciate each and everyone of you, and all the stories you have shared with me over the year as well as the photos you have sent me. A HUGE Thanks to all of you!!!

Baking and Decorating Sugar Cookies with my Sons

Every year me and my boys have a tradition of spending a day baking christmas cookies together and have done this every year since they were a year old. We had a great time and were joined this year by my sons girlfriend Kaitlyn and one of his good friends Jake. We started with awesome sugar cookies baked in many different shapes and sizes. I made 3 different homemade icings which were out of this world. I did a Buttercream Icing, w/ cream cheese, then I did a pourable Fondant, and finally a very Creamy Icing.  See below for the Poured Fondant Recipe, the Buttercream Recipe can be found at the top of the page under the Buttercream Icing Tab. I am attaching some Photos of our day of baking cookies.

Here is the Poured Fondant Recipe

Ingredients:

  • 6 cups sifted confectioners’ sugar (about 1 1/2 lbs.)
  • 1/2 cup milk
  • 2 tablespoons light corn syrup
  • 1 teaspoon clear vanilla extract
  • 1/4 cup of cream cheese (optional)

Mix together the corn syrup, milk and vanilla extract using a hand mixer

Then slowly add 2 cups of powdered sugar at a time to the mixture and blend well

If you are going to use the cream cheese that can be added once you have added all the powdered sugar to the mixture

Answers to your most asked Fondant Cake Toppers, and Figurines Questions

Hello Sugar Friends

It’s a very cold morning here in Ohio, and when I say cold, I mean cold, lol  I am constantly wishing I was back in Florida enjoying the Ocean.

I thought I would address some of your most asked fondant/gumpaste cake topper and figurine questions. I get lots of questions everyday about my cake toppers and figurines.  You  may have noticed that many of the comments do not have answers or replies from me, but that is not because I am ignoring those posts. When someone posts a comment on one of my posts, I get an email showing the comment and I usually just answer any questions or address the comments directly instead of answering in the comment section because there is not a lot of space to reply and sometimes the question can be a private matter so I feel it is just better to answer the questions I receive directly. I do my best to get back to each of you ask quickly as I can, I understand how frustrating it can be when you are trying to figure something out or try a new technique and you run into issues and need help.

Ok  lets discuss sugar sculptures, as you know this is my favorite subject and the thing I love creating most of all.

I am asked all the time, once you create a fondant/gumpaste figurine how long before it will start decaying, how far  in advance can I create my figures, can I put them in the fridge etc. So these are the things I am going to answer for you.

Here are some of the most asked questions I receive and the answers:

How long in advance can a gumpaste figurine  be made up before an event?

Figurines can be made up ahead of time without any problems. I always make my figurines up ahead of time so that they can set-up properly. I make them up, at the most about a  month ahead.

  

Can I put a gumpaste figurine or cake topper in the refrigerator?

It is not a good idea to put a figurine that is made with fondant or gumpaste in the refreigerator due to the condensation, it can cause the figurine to fall apart.

Can I use Marshmallow Fondant to make figurines?

You can use marshmallow fondant, however it is a very soft fondant and will sag and may not hold the shape very well so it really is not a great fondant for making figurines but I guess it depends upon what you are making.

How long can I keep a fondant/gumpaste figurine before it starts to decay?

Gumpaste figurines can be kept indefinitely as long as they are properly stored, I have figurines that are now 2 years old.

Why do my gumpaste figurines have large cracks in them once they have set up and dried?

From my experience gumpaste is made to dry very quickly therefore it is best when rolled out very thin such as when creating gumpaste flowers. What happens is when you create a figurine with gumpaste it dries from the inside out and rather quickly. This process causes the inside area of your piece to push outward thus creating cracks and problems in your figurine……. This is the main reason I use a mixture of fondant and gumpaste or the Wilton brand of fondant with tylose powder added to it when creating my figurines and other objects in cake decorating.

What fondant and or gumpaste do you use to create your figurines Donna?

I use Wilton fondant mixed with tylose powder to create my figurines. The Wilton Fondant is nice and durable which makes it great for creating figurines…….(Although I would never cover a cake with the Wilton Fondant due to the taste). At times I also use a 50/50 mixture of commercial fondant and gumpaste to create my figurines.

What should I use to glue my figurines together?

Water works very well to glues arms, legs, head, clothing together.  There is an Edible Glue that you can also use  to glue your figurine pieces together. The recipe  for the edible glue is located at the top of the page just click on the tab that says edible glue.

How should I store Sugar Figurines that I want to keep?

 They should be stored  in a cardboard box or like container with a lid.  (Never store them in the Fridge) Then I keep that container in a cool dry place. If they are exposed to alot of moisture or condensation this can cause them to break down. Because gumpaste and fondant is made mostly of sugar this acts as a preservative and this is what keeps the figurines from molding or rotting.

Can Gumpaste/Fondant Figurines be preserved long term?

 Yes, to preserve Fondant/Gumpaste Figurines, a clear coat can be sprayed on them, I use a clear lacquer spray. This will preserve the figurine and then you can display your piece in a display cabinet or store them away in a closed box.

Tips and Methods for Getting your Icing Smooth

Getting your icing smooth can be quite a task, however with some of the right tools your task can be quite easier. I get many emails asking how I get my icing smooth. So I thought we would go over some of different techniques used to get smooth icing and while at it I will share my particular method for getting my icing smooth.

The first thing that must be done to ensure a smooth cake is to make sure your cake is level.

The next thing is to put a crumb coat on your cake, some of you may have never heard the term crumb coat so I will give you a quick run down of what that is.
A Crumb Coat is just a thin layer of icing that is applied to the base of your cake, now you may have many crumbs get into your icing when applying this layer but thats ok because this is the crumb coat that will cover the crumbs and seal them in.

Once you have crumb coated your cake you can place your cake into the refrigerator for approx. 20 minutes while the crumb coat of icing sets up.

Now that your crumb coat of icing has setup it is time to prepare to ice your cake.  There are many different techniques used to ice a cake. Some use a pastry bag with a large icing tip to apply to the cake and then use a spatula to smooth out, others use a spatula to apply the icng. Find a method that works best for you and go with it.

 

Make sure that you put enough icing on the cake so that you do not see the under side of the cake, (please pay no attention to my cake in the pic where the cake is showing through, I did this so that I could show you the steps) I have seen cakes that do not have enough icing on them and the cake shows through. Once you have your cake completely iced it is a good idea to put it back into the refrigerator to allow it to setup or as some call it allowing your icing to crust. 20 minutes should be enough time for this however if the icing is not crusted to the touch leave it in the refrigerator for a little longer.

Icing that need to be smoothed

 

Ok, finally we are ready to smooth our icing. As you can see there are many steps leading up to getting your icing smooth and all these steps are important because they provide you with a good base to work from.

Once the icing has setup and crusted it times to figure out which method you will be using. So lets touch on some of the methods that are used regularly.

The hot water method involves having a hot plate for keeping a pan of water warm, then using a warm metal spatula to smooth accoss the cake. i have used this method however it was just too messy for me, now I know other cake decorators who do a fabulous job with this method so its a matter of personal preference.

Another method which is very popular today is the viva paper towel method and that involves using viva paper towels to lay on the cake and then use a fondant smoother to run over top of the icing with just the right amount of pressure. I use this method from time to time and it works great. Now if you find that your paper towel is sticking that means that the icing is not setup enough so way a little longer and try again. I have seen a little twist to the paper towel method and it involves the same technique but instead of using a paper towel you use a piece of plaon white copy paper. Believe it or not this works out very well!!

And last but not least is my favorite method and one that I happened upon accidently. I was going to use paper towels to smooth my cake,  however I was out so I began to panic thinking ,I do not have time to go to the store. So I started looking around the house like I usually do when I need a tool for cake decorating and there it was inside a bag in the closet, the perfect tool just waiting for my discovery. And that tool was a brand new small paint roller I had purchased for when I got the desire to paint the bathroom. I was soo excited and could not wait to give this a try. Now the roller that was on this paint roller was not the typical fuzzy type. It was a new erfoam kind that I thought I would try so this would be perfect for what I need. I got the paint roller together and got started. I placed the roller on top of the icing and began rolling just as if your were painting a wall. I could not believe how perfect this worked to smooth my icing. So this has now become my preferred method for smoothing my icing.

As you can see there are several techniques that can be used to smooth your icing. If you are new to cake decorating I would recommend trying different methods to see which one actually works for you and one that you feel most comfortable with. I am sure there are many other methods that decorators use however the ones listed are ones that I have tried and can speak of personally. If you would like to practice the different methods and do not want to bake a cake just to practice with. Then you can do what I did in the very beginning and that is to use a baking pan, just flip it over and use the bottom side. I did this alot when I was just getting started so I did not have to waste cakes while learning. I would ice the entire pan just as if it were a cake and then I could remove the icing and start over. Hopefully these tips will give you some ideas to get your icing smooth and looking great.

I know how expensive the cutters and tools are for creating gumpaste flowers so I have been designing a video that will show you how to make different sugar flowers without the use of cutters and all the fancy tools. (This is going to be a great video for all those who are interested in creating beautiful sugar flowers)

Latest Figurines and Auction at Duke University

Santa And his Reindeers

 

These are my latest Gumpaste Figurines that I created for an upcoming Auction that will take place at Duke University Medical Center. John Hillson an RN in the Oncology Unit from Duke University emailed me a few months ago wanting to learn how to create Gumpaste Figurines to go along with his Gingerbread House North Pole Scene that he creates each year to raise money to purchase Christmas Gifts for those who are in the hospital battling cancer. This really touched my heart so much so I told John that I would donate a Santa and a couple Reindeers to go with his scene. I lost my Dad, Grandma and my Grandpa to cancer as well as many friends and in addition my aunt Donna and the best uncle in this entire world, my uncle Roy are battling cancer right now so this is something I feel very passionate about. And to know that there are those out there who care for our loved ones and go out of their way to provide something special for them at Christmas means the world to me. So I pray that these figurines will help raise lots of money so those who are dealing with cancer will receive a gift to show them that they are very special.

John Hillson I want you to know that you are an Angel from Heaven for all that you do for those that you take care of each day at work. I’m sure that your job is not one that most of us could handle one day a week let alone fulltime so I want you to know we are soo grateful to not only you but all of the other Nurses and other hospital workers who give of themselves everyday to care for our sick loved ones and to make sure that they know, especially on the Holidays just how special and important they truly are. Thanks so much for all you do each day and may you be blessed 100 times over!!!

I’m Backkk from Vacation!

Hello all

Gosh I feel like it has been forever since I have written. I hope you all had a great Thanksgiving! I had a really nice Thanksgiving and have sooo much to be thankful for. I am so thankful for my family they are the best. We had so much fun in the van traveling to florida. We laid the seats in our van down and made the entire back end a large bed. It was soo cool laying in the back with my sons just talking and having a great time. My oldest son helped so much with the driving and that was great to have him to give us a break from driving. We left at 4am Friday morning and made it to Daytona by Firday at 2am. We were soo tired but excited to see the beautiful ocean. I love the ocean there is nothing like it in the world! We went on an air boat ride, boy was that alot of fun, my son was very nervous because the guy driving was going too fast for him but I loved it. I even held a very small alligator! I went to a large flea market down there, omg I loved it isles of nothing but stuff to look at, I not only looked I purchased too. I bought a mini teapot that is soo adorable, I love teapots and anything that is miniature. I came home with quite a few miniature plates that I found out that were used years ago to put pats of butter on. I also got quite a few new ornaments for the tree I have yet to put up. I found the cutest high heel shoe ornaments and little purses as well. I am never going to be the same, lol! 

I visited with my aunt Donna and cousin Susie who I had not talked to in 11 yrs, we had alot to catch up on as you can imagine. We had a wonderful time together and I want to thank them for everything!!!!!!! My aunt is a great lady! We went shopping and had the best time just the 3 of us, I will forever chersih that day and all the memories that I now have. Thanks Aunt Donna for EVERYTHING you made our visit one that I will NEVER forget.

I love the Christmas season, and everything that goes with it, I have listened to Christmas music everyday. It is very wierd being in Florida during the holiday seaon with it being so warm since I am so used to the cold and snow in Ohio which always signals that Christmas is on its way. But in Florida it just seems very hard to get used to. I am glad to be back at the computer and working on the website once again! I made a santa figurine as well as a few reindeer while I was gone, they were soo fun to create. I will post pics very soon for all you to see. Well I am going to go for now but will write again very soon.
